SOOO excited to have our Mom, Betsy, with us today teaching us an old Southern Living recipe for cupcakes with no icing but cheesecake inside!! This is definitely not a low calorie treat, but we talk about planning for indulgences and this is a great one. As a matter of fact, we’re not even going to calculate the calories on this one! (Note: That does not mean eat the entire batch!!;)

Cake:
1 Package Devil’s Food Cake Mix
(+ 1 Cup Water, 1/3 Cup Vegetable Oil, 3 Large Eggs for mix)
Filling:
1 Package Cream Cheese
1/3 Cup Sugar
1 Egg
Dash of Salt
6 oz Chocolate Chips
Prepare cake mix according to instructions on box. With mixer whip cream cheese and sugar until fluffy. Then mix in egg, salt and finally chocolate chips. Line muffin tins with paper liners and fill each about 2/3 full of cake mix. Place heaping teaspoon of filling right on top of cake mix. Place in 350° pre-heated oven for 25 minutes. Enjoy every bite of this treat…Merry Christmas!!
