“Faux-nola”
1/3 cup plain quinoa
1/2 tbsp chia seeds
1 tbsp honey
1 tsp cinnamon
vanilla extract to taste
2 tbsp raisins
2 tbsp unsalted almonds
cooking spray of your choice
*mix together in a mixing bowl. spread mixture onto a baking pan and put into a 375degree oven for 10-15 minutes….turning the mixture every 5 mins. Once brown take out of oven and let cool for 10 minutes and serve! 🙂

Jumbalaya Ingredients
1 tbsp Olive Oil
1 tbsp Cajun Seasoning
I make my own Cajun seasoning with this… 2 tsp salt, 2tsp paprika, 1 tsp black pepper, 1 tsp onion powder, 1 tsp cayenne pepper, 1 ¼ tsp dried oregano, 1 ¼ tsp dried thyme, ½ tsp of red pepper flakes – I used this on other dishes as well.
1 1b of turkey kielbasa
1 diced onion
1 green bell pepper
2 celery stalks
3 cloves of fresh garlic
1 ¼ cup of uncooked brown rice
2 ½ cups of chicken broth, I used low sodium and added seasoning where needed
1 16 oz can of Italian crushed tomatoes
Dash of Worcestershire
**Divide into 6 servings
I like to serve this with a big green salad and Ice tea!!

Carbohydrates: 22 (11 from rice, the rest from veggies)
Fat: 6 grams **Tip – If you absolutely do not want to do rice, I understand! Make this a stew and add zucchini, squash, more bell pepper, mushrooms and your favorite veggies to cut out the starch!
