Olivia’s Breakfast Tour

Hi lovelies!!!  I know this has taken WAY too long to post….but, better late than never. J  After many requests Hannah and I decided to film some of our “typical” meals throughout the day.  Up first…Breakfast!

We all know breakfast is the most important meal of the day.  Even if my day gets crazy I know I’ve given myself the best beginning with a healthy breakfast with my family, always do the same for my husband and for my one year old baby, he eats the same as we do and at this age boys start talking so he asks me for our healthy snacks at breakfast.

Here are the ingredients you will need for this recipe:

1 cup egg whites (or as many as you want from separated eggs)
3 Tbsp chopped white onion
1 cup chopped baby bella mushrooms
½ cup sliced grape tomatoes
1 cup baby spinach
cooking spray of your choice
1 cup sliced berries

Absolutely perfect! I need help in the actual cooking part and am particularly interested in how you save fresh veggies and fruits. For instance, you showed the onion bag that you keep in the freezer. Excellent! I have a FoodSaver for my strawberries but perhaps you know of an easier way to keep those fragile berries and any other berries? Also, do you try and get most of your carbs, like 70-80% – by lunchtime as Harper suggests and, if so, how is your hunger come evening?

Hi! Yes, I try to eat most of my carbs by lunch time…this way I’m using those carbs throughout the day for energy! I find that protein and veggies keep me the most full, so my dinners usually consist of that. By sticking to protein and veggies at dinner it keeps me full till morning! xo

Hahaha!! So true right?! It always kills me when people talk about not eating carrots because of the sugar content….REALLY? Last time I checked people gained weight from cupcakes not carrots! 🙂

Love this recipe so much. The best part about it is that it looks filling too. I’m going to get the ingredients after work and definitely having tomorow morning after my workout for breakfast!

Typically, for breakfast I have an iced chai tea and a luna bar, or chobani and a whole wheat 100 calorie fiber one muffin. Breakfast and Lunch I always eat really healthy and portion control..It’s dinner that is my problem. By the time I get home from work or after I workout after work I just want a big satisfying dinner.

Any suggestions/reccomendations? Could you please post some recipes for dinner or videos?

Love your egg recipe! I eat eggs a lot too, but more for lunch or dinner. Weird? I guess I like something sweeter or fruity for breakfast and veggies later in the day. My go-to breakfast these days is “overnight oats”. I combine oats, greek yogurt, chia seeds, and a splash of milk. Let it sit overnight and then top it with fruit in the morning. During the work week, I make up several morning’s worth ahead of time, so its easy to grab and go!

I do overnight oats too! I mix together large flake oats with 1 T. chia seeds, mixed with light vanilla soy milk in a bowl and leave it in the fridge overnight. In the morning I mix it with greek yogurt and fruit. My current favourite is fresh pineapple and some sliced almonds. Soo delish and it keeps me full for hours.

Love the video! One thing I do to save on time each morning is to make a “fritatta/crustless quiche” on Sunday nights and then all i have to do is slice it up and put into tupperware containers and grab it on my way to work. The one I made this week has spinach, bell pepper, portabella mushrooms, grape tomatoes, eggs, milk and a little goat cheese. Higher calorie count than your breakfast because of the whole eggs and milk mixture, but still a really satisfying and filling breakfast. It keeps me full at least 4 hours, sometimes even 5. I always have a side of fresh berries too! Can’t wait to see whats for lunch and dinner 🙂

Love this! Omelets and scrambled eggs are so perfect in the morning, and the hot sauce is key! Hot foods get your metabolism going first thing too. Keep posting these food videos they are awesome!

Love the video! Keep them coming! I have had the same breakfast FOREVER because it’s just quick and lean–4 egg whites, and 1/3 c. oatmeal with a dash of soy milk (vanilla–for a little taste!). Clean protein and a packed carb for the workout that awaits me.

I was at costco the other day and they were giving samples of Fage 0% yogurt! They drizzled a little honey on it–which was delicious! How do you feel about honey as a sweetener?

Honey and Agave are great sweeteners….I don’t have a problem with them in moderation. Remember, they act just like sugar in your body….that is why Stevia is a better option for me. It sweetens but doesn’t add the extra calories other sweeteners do. 🙂

Perfect – thanks for sharing. My favorite treat-type breakfast is 1 cup Greek yogurt, 1 cup berries, & 2 tablespoons granola sprinkled on top. I use agave but should probably use stevia instead.

Yay! Loved this. Do more videos. The hardest part of a lifestyle change is knowing how to change things up…..so getting new ideas on what you eat would be fantastic!

I can’t wait for more cooking videos! This looks delicious. I’d love a video on food storage/prolonging produce’s shelf life. Also, do you never eat any sort of bread? Do all your carbs come from fruit?

I would love to know this, too. When they post pics, I notice there doesn’t seem to be any breads, rice, sweet potatoes, etc.

Whoops…I don’t know why it posted that comment again. Weird. To answer your question….I don’t eat bread very often. On the rare occasion I will eat Ezekiel Bread which is a sprouted grain bread. Its high in protein and really good. Most grocery stores sell it in the freezer section. It doesn’t have any preservatives so you have to keep it in the freezer or refrigerator. I don’t eat any rice or potatoes either. If I REALLY want to eat a potato I will eat 1/2 of a baked sweet potato, but that is not often. I get most of my carbohydrate intake from fruit and veggies. That is what works best in my body…everyone is different. If you find that you do well with bread and rice…I say go for it! 🙂

I love love love this video!!! I’m really excited about seeing lunch and dinner. Breakfast is actually one that’s easier for me, but lunch and dinner get difficult because I’m so tired and run out of ideas for quick and healthy. You guys are so inspirational and I love to hear anything you have to say or share! Thanks for spending your own time to share these with us.

I love the hot sauce, I use a little chili paste in mine and I want to add that the hot sauce also helps increase metabolism so it’s a win win in my book. Great job.

Love this! I drink a shake most mornings and choose egg whites as a low carb snack later in the day, but I eat egg whites ALOT.. Sometimes multiple times a day. My yummy shake has: Frozen berries, lots of spinach, protein powder, maybe a little dry Quaker oats some mornings, unsweetened almond milk, and chia seeds! My favorite breakfast at the moment 🙂 I have really been trying to eat the same things every day at the same time–it’s really helping keep me on track and not splurge. Thanks for sharing your video–can’t wait for the others!

That smoothie sounds yum!! Sometimes when it is super hot outside in the summer I will have a smoothie for breakfast…I love putting spinach in smoothies….such a great way to sneak some veggies in there! 🙂

I like the way you made your omelette, I’m going to give it a test run soon. Although, I’m going to add the yolks because that’s where all of the nutrients are (and of course, because they’re tasty!)

Love this!!! Question: Is the womens formula vitamin and probiotic Trader Joe brand or some other brand sold at Trader Joes?
On another note, just invested in some ceramic coated pans so we no longer have to use cooking spray. 🙂 Have you used them and what do you think?
Finally, going to the store as this seems like the perfect ‘first day of school’ meal for my kiddos as well as myself. I have learned that if I finely chop spinach my kids will eat it because they consider it another herb like cilantro or parsley.

That is such a great tip about the spinach!!! My parents have ceramic coated pans and they love them…I need to give them a try. The probiotics aren’t gender specific…they just say Trader Joe’s Probiotic on the front. 🙂

Thanks for the ideas for breakfast! Please keep doing these videos! It is so encouraging to see how y’all are keeping your weight off and inspiring others to be their best. I’ve watched your season of Biggest Loser two times because that particular season was so very positive and it really motivates me to keep pressing toward great health!

I pretty much eat greek yogurt w/berries and oatmeal w/chia seeds for breakfast every day. I’ve been wanting to eat more eggs/omelets but it just doesn’t excite me for some reason (probably the lack of sugar lol), but those baby bella additions to your omelet does sound delicious! I’m going to give that a try. I like to add Wholly Salsa to my egg white omelets when I do make them. It adds just the right spicy kick to it. Yumm.

I would definitely like to see more of these videos. You girls should consider creating a Pinterest page so you can add a Pin It button on here and we can store/share the recipes and videos! 🙂

I do eat bread and the one thing I really love for breakfast are tacos. However, you could simply skip the tortilla and prepare an omelet using Mexican inspired fillings: chorizo seasoned ground turkey, black beans, salsa, cilantro, etc. Sounds yummy…….I might have to have this for breakfast tomorrow!

chopped onions in the freezer!!?? GENIUS! i don’t know why i’ve never done that before! thanks for such a great video! I make similar omlettes or egg scrambles myself. I’ll mix it up my breakfast with oatmeal some days – toss in half a banana, walnuts, little peanut butter, cinnamon & touch of honey. i like mixing up the fruit with oatmeal too. what do you think of liquid stevia? i bought it to add to my iced coffees.. i guess it’s not just the leaf, so prob. not a good idea. this morning i did my own version of Bob’s green drink smoothie = protein powder, hemp seeds, chia powder, acai powder, maca powder, a bunch of kale, frozen spinach, frozen blueberries, frozen pineapple, half a banana & water. super yummy!!! all the veggies & fruit i make sure to buy organic! looking forward to your other food videos… keep em coming!

Thanks Olivia! Great post! Your omelette is very similar to mine….I’ve been adding some fresh basil and fresh parsley since I’ve got a ton of it growing in my garden. 🙂

Ok here is what I do for breakfast…Every Sunday I make my breakfasts for the week of 5 oz egg whites, Chard and salsa. I use onion powder and dehydrated onions (because I’m lazy), and garlic powder. I scramble it all up and then put it in a glass container. I do this 4 more times. I keep most of them in the freezer so the eggs don’t go bad and just pull them out of the freezer and into the fridge the night before.

I also fortunate that I live close enough to Egg Whites International (http://www.eggwhitesint.com/).

I use Chard instead of spinach, it’s much hardier, less watery, and more packed with nutrients.

So glad you posted this! That omelette looks delicious, definitely going to give it a try. I need a good breakfast staple for when school starts up again and this looks like it could be it. It’s also great to hear that you have plans to expand myfitspiration in the Fall! I would love to see more vids like this one. Thank you for sharing your journey with all of us readers. Breakfast is my least favorite meal of the day b/c my gag reflexes are the strongest in the morning. I usually rotate through 3/4 breakfast options. Cereal w/ 1/2 cup skim milk (either whole grain cheerios or something from quaker), Oatmeal, Whole Grain Frozen waffle w/ a little bit of chocolate peanut butter on it. Keeps me full until morning snack or lunch. On the weekend when I have more time I’ll do an egg or two w/ some veggies. (I’m a firm believer that the yolk is part of the egg for a reason and in moderation it can’t be horrible for you.)

I LOVE this! Thank you so much for doing it! I never learned to cook and have never prepared my own meals instead surviving on Lean Cuisine and Smart Ones frozen meals. Since learning they’re not too healthy, I’ve been trying to figure things out in the kitchen and this video was super helpful in that regard! I hate mushrooms of all kinds but everything else looked great and watching you prepare it taught me that (a) I can try lots of veggies in my eggs and (b) that it is possible to make an omelette! I’ve never tried before because it seemed hard and too “chef-like” for a novice like me but you made it look “do-able.”

There are three breakfasts that I rotate currently…one is scrambled eggs with diced bell peppers, onions, carrots, celery, and spinach. Another is frozen mixed organic fruit with protein powder, coconut milk, and spinach blended together. And the last is Fage Greek yogurt or a Nugo bar for those days I’m running late. I have to admit though that too often I run out of time and don’t have anything until snack time mid-morning which is usually a part of my packed lunch.

I attended a free nutrition session at my gym recently and they said that olive oil and other non-stick sprays turned into trans-fat at high heat. They suggested using organic butter or coconut oil instead. Have you tried any others? I wish I liked coffee…the caffeine is a good metabolism boost and I’m so tired all the time that a caffeine boost would be great! I used to drink three 20oz bottles of Diet Coke every morning for the caffeine but I went cold turkey off that and haven’t had one since!

This looks and sounds delicious! I really enjoy the cooking/foodie videos. You got me hooked on FAGE Greek Yogurt right after you guys launched this blog and that is still a staple breakfast or snack item at my house!

I so needed this video today! I had a few “off” days and I was feeling pretty discouraged…but to see how awesome you look and the fact that you are still living the healthy lifestyle is pure motivation!! Thank you!

I am curious, do you follow the paleo diet? Just wondering if you eat whole grains on a regular basis? I am considering reducing my carbs from oatmeal/sweet potato/quinoa/ect and getting them from veggies/fruit instead.

I just moved into my first apartment today (no parents, just me and two roommates!), so this will be the first time I’m going to be cooking for myself. That omelet looks awesome, and pretty easy to make! I’d love more simple and quick recipes that a single girl like me can make!

I love that you did this! It made me want to go make this for dinner. Just a couple of questions, first, do you just take the onions straight from the freezer and add them or do they sit out before you use them? Second, do you usually eat breakfast first thing in the morning before any of your workouts?

Yummers! Loved the video–keep them coming! I am going to try that tomorrow morning. You just cracked me up when you were talking about the variations to the Omlet and you said “you could use low fat cheese, but I stay away from cheese…..because I can’t be trusted!” I about fell off my chair laughing. Those very words have often come out of my mouth. My norm for breakfast is a bowl of fruit with nuts, seeds, dates and yogurt. On Sundays I chop up all kinds of fruit–apples, pears, blue berries, strawberries, mango etc. etc. I make a big tupperware tub to last for the whole week. Then I take about 3/4 cup of the mixed fruit, add about 2 tblsp. greek plain yogurt (the one with the least grams of sugar), chop up 3 dates, add about a tblsp. of sliced almonds, sometimes a tsp. of pecans and about a 1/2 tsp each of ground flax seed and chia seeds. Soooo good and it keeps me full all morning. I love the blog you and Hannah have. Thank you for the inspiration. I’ll try to pay it forward in my blog…fitat99

I love the Vlogs!!! I am such a ‘visual’ person, so actually watching what you do helps me get it! ha ha What I loved most about this one was the Eggology stuff you talked about! YAY!!! I hate cracking eggs for egg whites and had heard about Egg Whites International, which is honestly great; however, I want something close by, not something I have to order. We have a Costco and Whole Foods near by, so I am definitely checking this out!!! 🙂

My favorite healthy breakfast right now is a green smoothie: almond/coconut milk (my new fav!), spinach, frozen mango, frozen blueberries, vanilla protein powder. YUM! 🙂

I am curious…….I have contemplated limiting my carbs more….as it sounds like you do, with the bread and rice and potatoes – even healthy ones. I have been diagnosed with PCOS. Did i hear right that you were as well? Is that why you eat less carbs? I had heard someone with PCOS should eat less than 80g carbs per day. Was just curious.

I go simpler. Bread from breadmaker. Or rice from ricemaker. The complicated breakfast that you make requires money, fridge space, counter space, LOTS.

Maybe I’ll cook something complex one day. but for now it’s sooo much easier to cook rice and potatoes in the ricemaker and add on tomatoes or cheese toward the end.

It’s also easier to go to McDonalds, but being healthy isn’t always easy. I really don’t see anything complicated about her recipe. It really doesn’t require much money and part of the point is not eating so many carbs, so bread makers and rice makers aren’t something alot of us here can really use. Everyone’s entitled to their own opinion and comment, but yours just sounds really negative and rude to me.

Love this! You do a great job of showing how, too! I’m going to use your posts to clean up my meals. I have a broken and healing arm right now and love the fitspiration. Cooking/shopping takes time, but this recent experience has reminded me that the world won’t fall apart if I slow down.

I see you have a decent sized fridge 🙂 i live in NYC too and my fridge is not full size so getting a full head of kale, romaine and other veggies along with my water filter can be difficult! not to mention all my boyfriends food too. anyway, thanks for sharing! love the cooking videos! not sure i could eat eggs without salt but i appreciate where you’re coming from 🙂

Just wanted to chime in and say that I loved the video. I typically have a protein shake for breakfast since I workout in the early am, but I have breakfast food for lunch since it is my fave. Can’t wait to see what else you two do. Huge fan!

I loved your short cuts like the onions in the freezer and the eggology. I stress about cooking at home because of the time it takes to prep and clean. I loved the cooking video and am looking forward to many more. Funny but true, my problem with egg whites is I cannot bring myself to throw away the yoke, or load my pets up with them either. So I was relieved to hear about being able to just buy egg whites and let someone else deal with yoke guilt. : ) Great frozen onion tip, would appreciate more of these type and do ahead type tips.

I have the same breakfast everyday. Half a cup of oatmeal with 1 tablespoon each walnuts and ground flax seed. About 1/2 cup blueberries or strawberries or chopped apple on top with a splash of milk. It keeps me full for hours. I must say, though, this omelet looks very good! For me, it would work better at lunch time. Maybe with a salad. I love your video–I’m really in a rut and need to shake things up.

I am new to this whole eating healthy thing and I am trying to stay positive about it. I know protein and veggies are good for dinner, but what is a good portion for them?

Also, I know you said you tend to eat most of your carbs by lunch time. What is a typical lunch for you? What about snacks?

I too would love to see other meals! I always have oatmeal (at least 6 days a week sometimes 7), a little less then 1/4 cup oats, a couple tea spoons flax seed, oat bran and wheat bran and then a banana. I’m going to go to the store (all out of veggies) so I can change it up and have a healthy omelet every few days! 🙂

I am a little behind but I loved this post. I see you have more like this coming. I wondered if you would consider posting a quick rundown of what you eat on a typical day. Or, if you could suggest an eating plan that is close to what you stick to.

I used to be so intimidated by eggs too! When I learned the endless possibilities of the egg white omelet, my world changed!! I like roasted red pepper and spinach in mine with a dash of hot sauce!!! Try it! Welcome to the world of cooking videos!!

I have the same thing every morning…4oz egg whites, Chard, and diced tomatoes. You should try Swiss or Rainbow Chard it’s very much like spinach, but much hardier and much more nutrient packed.

I started not to watch this one. Because I don’t like eggs! However, I’m glad I watched because you gave me ideas on how to add veggies to my breakfast! I sauteed some mushrooms the other morning and added to a pack of instant grits. Delish! I am looking forward to adding some spinach and tomatoes along with the mushrooms next time!
