Homemade Orange Applesauce

Just in time for Halloween here’s a healthy alternative to all that candy floating around…homemade applesauce with an orange tint. Take it to a party or enjoy in your house with your family!

Ingredients:
6-8 large apples peeled and cored
2 cinnamon sticks
2 tablespoons agave nectar or honey (or sweetener of your choice)
Water to cover apples in pot
Yellow food coloring, or red and yellow to make orange (optional)

Place sliced, peeled, and cored apples in a stockpot
Add water just enough to cover apples
Add two cinnamon sticks
Bring to a boil
Reduce heat to medium low
Allow contents of stockpot to simmer for an hour and a half stirring every 15-20 minutes
When applesauce reaches desired consistency add sweetener of your choice
At this point use caution as mixture will be VERY hot
Allow mixture to come to room temperature before adding food coloring (if so desired)
ENJOY!

Serving size: 1 cup, 85 calories

Delish Gluten-Dairy Free Pumpkin Cookies

Today we proudly share a recipe for Pumpkin Cookies that are Gluten and Dairy free…but guess what…they are so tasty!! You’re going to love them.

Here’s the recipe…

Pumpkin Cookies (Calorie details here)

2 cups blanched almond flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon pumpkin pie spice, plus more for sprinkling on top of cookies
1/2 cup pure pumpkin puree
1 small ripe banana, mashed
1/2 cup maple syrup (or sugar-free if you prefer)
1 tablespoon vanilla extract
1/3 cup coconut oil

Preheat oven to 350 and line a baking sheet with parchment paper.

In a large bowl whisk together the almond flour, baking soda, salt, and pumpkin pie spice.

In a small bowl mix together pumpkin puree, mashed banana, maple syrup, and vanilla extract.

Mix wet ingredients into dry ingredients and stir until combined. Add melted coconut oil and stir to incorporate.

Drop spoonful of batter (about 1 to 2 tablespoons in size) onto prepared baking sheet. Sprinkle the tops of the cookies with additional pumpkin pie spice. Bake cookies for 25 to 30 minutes until golden.

Olivia’s Breakfast Tour

Hi lovelies!!!  I know this has taken WAY too long to post….but, better late than never. J  After many requests Hannah and I decided to film some of our “typical” meals throughout the day.  Up first…Breakfast!

We all know breakfast is the most important meal of the day.  Even if my day gets crazy I know I’ve given myself the best beginning with a healthy breakfast with my family, always do the same for my husband and for my one year old baby, he eats the same as we do and at this age boys start talking so he asks me for our healthy snacks at breakfast.

Here are the ingredients you will need for this recipe:

1 cup egg whites (or as many as you want from separated eggs)
3 Tbsp chopped white onion
1 cup chopped baby bella mushrooms
½ cup sliced grape tomatoes
1 cup baby spinach
cooking spray of your choice
1 cup sliced berries
