Delish Gluten-Dairy Free Pumpkin Cookies

Today we proudly share a recipe for Pumpkin Cookies that are Gluten and Dairy free…but guess what…they are so tasty!! You’re going to love them.

Here’s the recipe…

Pumpkin Cookies (Calorie details here)

2 cups blanched almond flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon pumpkin pie spice, plus more for sprinkling on top of cookies
1/2 cup pure pumpkin puree
1 small ripe banana, mashed
1/2 cup maple syrup (or sugar-free if you prefer)
1 tablespoon vanilla extract
1/3 cup coconut oil

Preheat oven to 350 and line a baking sheet with parchment paper.

In a large bowl whisk together the almond flour, baking soda, salt, and pumpkin pie spice.

In a small bowl mix together pumpkin puree, mashed banana, maple syrup, and vanilla extract.

Mix wet ingredients into dry ingredients and stir until combined. Add melted coconut oil and stir to incorporate.

Drop spoonful of batter (about 1 to 2 tablespoons in size) onto prepared baking sheet. Sprinkle the tops of the cookies with additional pumpkin pie spice. Bake cookies for 25 to 30 minutes until golden.

Hey Hannah and Olivia, So excited to try these cookies, as my daughter Grace was recently diagnosed with Hashimoto’s disease (thyroid), and her naturepathic doctor wants her to stay away from gluten and dairy. It’s been a huge deal trying to find foods, especially treats that taste really good, so I’m really excited to head out and get these ingredients and try it out. Thanks again for all that you girls do to inspire all of us to live our best lives! Love you, Wendy T.

But awww you didn’t figure out the calories for us πŸ™ I know you said that they weren’t low in calories, but do you know about how many calories per cookie?

O-M-Goodness!!! I was just on pinterest this weekend looking for an amazing pumpkin cookie recipe. And look at you!!! You did all the hard work for me! Thank You! I actually didn’t find a recipe I liked as well as this one. Well done! I can’t wait to make these:-) I am planning on taking them along with some tasty paleo chili to a work potluck this week.
If you are totally into cooking with pumpkin and other fall veggies, try paleo harvest stew with pumpkin, butternut squash soup(also Paleo), and orange sweet potato baked chips. So Devine!

D-E-L-I-S-H!!! These cookies are a raving success! I agree with Sara though, These cookies are meant to be shared… or frozen!!! So good that it is difficult to stop at one. Use your will power ladies! I am taking my willpower to work and letting the masses gobble it up:-) The work potluck is going to be so awesome thanks to this sweet fall addition.

Yes, meant to be shared! This a cookie I feel good about sharing with people since it doesn’t have all the junk in it! Hooray for a cookie with wholesome ingredients that doesn’t taste like dirt!! πŸ˜‰

These look so delicious! I’m definitely making them soon. I’ve started baking a lot more lately as well as taking traditional recipes and making them healthier. I even told my family that this holiday season I’m taking charge of the menu. All the fried stuff will be banned, the sugary treats replaced by healthier version. To my surprise, they are one board.
I started changing my lifestyle 2 years ago. 55lbs down, 9lbs away from my goal weight, working toward my ACSM certification, I never felt this happy an energetic. I am so grateful to say I am rubbing off on my family. They started eating healthier, move more and my dad, who’d always resist to regular workouts, let me put together a training program for him. He’s always reporting back to me about his progress, been doing it diligently for over 2 months now. According to him his strength/endurance improved, not just at the gym but in his daily life, and according to my mom, he’s lost weight. Next step: fixing he’s diet. He’s finally OK to let me do that. I am over the moon:)

I made these today, they are SO good! I used a tablespoon to measure them out, I definitely suggest making them smaller for less calories! I ended up with 33 cookies so it came out to be only 63 calories per cookie! However the rest will be going to work because they are hard to stop at one! πŸ™‚

For this certain recipe, it’s on the “Paleo Approved” list. Also Coconut oil is a great healthy fat and is better for baking than vegetable or canola oil. All natural is best!!

Love these! Just made them yesterday while I was snowed in and the bf said he would pay money for these. I cut the maple syrup in half and also didn’t use as much coconut oil (maybe a little more than 2/3 of what was suggested) and they came out great! They didn’t spread but I’m assuming that’s due to less liquid in them. Still delicious! Thanks!
